TOPIC: SIS or SOT for fishing?

SO everything I have read reagarding fishing from a kayak points towards a SOT.

The only thing I dont understand regarding the SOT are the scupper holes. I do not want to get wet when I go kayak fishing, and sitting my but in a puddle of water while im paddling around doesnt sound very fun especially when its cold out. And my understanding is if you have scupper holes, you will get wet. I understand you can get scupper plugs...but am wondering to myself, would I be better off with a SOT and using scupper plugs? or just getting a SIS.

Probably worth mentioning that I would also like something lightweight so I can do a short hike in with the kayak. It seems the SIS are lighter or easier to carry? I know there are kayak dollys you can use as well but seeing this guy just toss this thing around like this got me wondering.
