- 2 cod fillets
- 1/2 loaf of Italian bread
- 1/2 white onion
- 2 tbs minced garlic
- 1/4 c butter
- 1/4 Italian dressing
- 1/2 cup shredded Parmesan cheese
Combine butter, garlic and chopped onion into a skillet and heat until the butter is melted. Cut bread into cubes around 1". Pour butter mixture through strainer to remove the garlic and chopped onion "saving them for later", and pour onto the cubes of bread. Mix around the bread and add shredded Parmesan cheese. Bake at 450 for 20-25 minutes. They will brown around edges and smaller pieces. Remove and let cool. Once cooled and hardened crush into crumbs. Pour the saved remains of onion and garlic from the strainer back into skillet. Sear the fillets for appox 3 min each side. Remove and put on a cookie sheet. Lightly coat with dressing and then cover with bread crumbs. Bake in oven at 450 degrees for 20-25 minutes. Place in middle rack. Check and ensure it is baked all the way through and the bread crumbs start to brown. It will look similar to the photo. Remove and serve.
