so i don't know about yall but i love bacon rapped scallops and i love pizza so i created this pie, from several pies that i enjoyed but new that i could make them better so here goes:
sauce:
1 cup whole milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon plus a pinch salt
a splash of chipotle tobbasco
3 to 4 heads Roasted Garlic
toppings:
1lb bay scallops
1lb of bacon, cut into 1 inch pieces par cooked
1 cup of shredded parmesian cheese
1 cup of shredded smoked gouda
1 cup of mozzerala
dried oregano and basil
dough:
i use the flieshmans no rise dough simple and easy.
so the sauce is a little tricky if you have never done a roux before basically u melt the butter then you add the flour over medium heat stirring almost constantly, i usually let the flour cook for about a minute to 2 minutes but if i see the flour start to change color like a dirty blonde color i add the milk. stiring all the time i add the garlic tobasco and salt. break up the garlic with the wisk as small as possible. bring to a simmer and let sit for about 2 min.
while that is fetching up a little go ahead and roll out the dough then go ahead and spread the sauce down. then add the cheeses. spread the scallops and the bacon out then sprinkle on some of the oregano and basil. bake at 500 degrees till the crust is golden brown. oh this recipe is for 2 to 3 pies depending on size. this stuff is great if you want to impress the misses.
