IM FROM NE PA.
WE GOT A LOT OF ROCK BASS IN OUR WATERS..
I THINK THEY ARE A SWEET PANFISH..MOST FISHERMEN TOSS THEM BACK.
I ALLWAYS KEEP A FEW EVERY YEAR...
I LIKE TO BLACKEN THEM,ON THE GRILL OR A CAST IRON PAN.
1].I CUT THE HEADS OFF,GUT AND SCALE THEM.
2[.RINSE,WELL,AND PAT DRY WITH PAPER TOWEL ,INCIDE AND OUT.
3].RUB FISH INSIDE AND OUT WITH OLIVE OIL.
4].THEN COAT WITH BLACKEN SEASON,INSIDE AND OUT.
5].MY BLACKEN SEASON IS CAYAN PEPPER,BLACK PEPPER,OINON POWDER,GALIC POWDER.OLDBAY,LEMON PEPPER,PAPRIKA AND A BIT OF SALT.
6].WHEN COATED I PUT A SHEET OF FOIL ON A HOT GRILL,BRUSH IT WITH OLIVEOIL AND GRILL FISH ON 1 SIDE FOR 7 MINUTES AND THE OPISITE SIDE FOR A FEW MORE,YOU CAN LOOK INSIDE FISH AND TELL WHEN COOK.
7].IN CAST IRON PAN I DO IT THE SAME WAY WITH THE PAN INSTEAD OF THE GRILL.
GREAT TASTING FISH.SWEET BUT SPICY,,KINDA LIKE MLD,BLUE CRAB..
I SERVE WITH A SLICE OF LEMON AND COLESLAW.,,AND AN ICE COLD PBR.
IVED TURNED A LOT OF PEOPLE ON TO THIS RECEPIE.
GIVE IT A SHOT.

mmmmmm my mouth is watering! I will have to keep a rock bass or two this summer. i have always tossed them back! thanks for the recipe!

I was at my Cabin this past weekend in NW Wisconsin. My cousin's friend was talking about how good Rock Bass are to eat. I have never thought about eating one before but now I'll have to keep it in mind.

Just to be clear. Are you talking about fresh water rock bass? With the red on the eyes? Smallish about 10" or so?

Good looking recipe. We have several kinds of hind that are basically a salt water perch. Actually a grouper. Will give this a try next time out?

Well your a lucky man for sure. In Missouri we call them goggle eye. Very strict limits and seasons like bass. They are one of the most prized river fish in the area. Amazing to eat!!!!! We would use crawdad tails or Rapala crawfish lures. We would find a deep riffle in clean water and quietly work it over. If you put 2-3 little split shot in front of the Rapala about 8" in front of the lure. It will get way deeper.

I have fly fished for them and small mouth for so many hours.

Truly one of the best fresh water fish there is. For catching or eating.

Wow,Bro.
We have no size limit and a 50 creel limit.
Its one of the most overlooked panfish ,here,In PA.
Such,a sweet tasting fish.reminds me of Crab.
