Not a fish related recipe how ever a great side dish for practically anything and super simple to make.
Stuffed Mushrooms
8oz package of cream cheese
2 large packages of mushrooms or 3 small packages (white or portabello)
1 heaping spoonful Minced garlic
1 – Small package of real bacon pieces
1 teaspoon Onion powder
1 teaspoon Ground Cheyenne pepper
1 tablespoon Oregano
1 Tablespoon Bell Pepper flakes
1 teaspoon black pepper
1 teaspoon garlic salt
1 teaspoon cumin
1 spoonful of mayo
1 tablespoon of tapitio hot sauce
1 teaspoon chili powder

1. Wash mushrooms and pull stems and place mushrooms on an oiled cooking sheet.
2. Preheat oven to 325
3. Place a heaping spoonful of minced garlic in a small skillet with bacon grease (or oil) with the bacon pieces, oregano and bell pepper flakes. Heat until bell pepper flakes kind of rehydrate approximately 4-5 minutes.
4. Mix cream cheese with onion powder, Cheyenne, and black pepper, garlic salt, cumin, mayo, chili powder, and tapitio thoroughly then add the rest of ingredients from the skillet mixing them in as well.
5. Stuff mushrooms heavily and bake at 325 for approximately 25 minutes or until mushrooms have browned and fluid is gathering around the base of the mushroom.

You can also use chorizo instead or with bacon bits and add/substitute whatever spices you want. I tend to change it up on occasion and most seasoning is done by sight rather than measurement.
