mayo
chohula chipotle hot sauce
lime (1 fresh is best)
cilantro
chives
parsley
garlic cloves
green onions
brown onion
olive oil
salt & pepper

Take 1.5 cup mayo and mix with hot sauce in a tupperware container or serving bowl. Put more or less hot sauce in depending on taste or if kids eating. I put in half a bottle. Juice lime and mix with mayo/hot sauce. Add some salt and pepper. Finely mince green onions (only green part) chives, parsley and cilantro and add to mix.
Put in fridge.
Take 1/2 brown onion and as much garlic as you like and mince finely. Caramelize onions over a low heat with olive oil and salt and pepper. When onions are caramelized add minced garlic and cook another 5 mins low heat.
Take onions and garlic off heat and let cool completely. When cool, add to rest of sauce and stir thoroughly. Test for seasoning and add if needed.
Cover and return to fridge for twelve hours.
Spread over tortilla before fish and Pico de Gallo. As we say here in Hawaii "Ono"!
