I am looking for a batter mix to spice up some fried bluegill, shellcracker, redbreast, warmouth, etc. Both filleted and whole, cleaned and gutted fish.

I like it spicy.

Please share with me any brands you buy at the grocery store.

But I'd really like any home-made batters and mixes you might have.

Please don't be as stingy with the recipes as you guys are with your fishing holes :yuush: :)

If you like a corn meal base, I mix new Orleans batter and louisiana batter half and half. It's just right for us. We get them at walmart.

I like the zatarrans (sp?) and shore lunch original with a couple dashes of cayenne pepper. Coat moist panfish fillets in mix, deep fry until they just start to float (golden brown/reddish)
A couple dashes of Franks or Tabasco just add to the tastiness!

Been doing this for years. You can thank me later. Buy some Louisiana hot sauce as well as louisiana fish cornmeal. Dip the fish in the hot sauce and then the cornmeal. Fry accordingly.

For whole fish, I just like to flour and fry. I put chili, garlic, onion, salt and pepper in the flour, dredge and fry.

If I'm frying filets, I might do the same or if I'm wanting to eat it with salt and vinegar, I dredge then batter with beer batter.

During camping trips in the past we have packed light and only taken salt, cumin, and chili powder to season our catch. Basically "blackened" we would heavy season one side of the filet and fry it in the pan. Nothing fancy but we loved it.
