After recently receiving a dehydrator as a gift, and a bit of trial and error, this salmon jerky recipe has finally made the grade. Jerky makes for a great pocket food when out on the water for a long day of kayak fishing. It is also a great way to use up any unused salmon in your freezer as well. The salmon jerky will keep for somewhere between 2 and 3 weeks at room temperature and can be frozen in order to be kept longer.You'll want to plan ahead a bit when making the jerky as it will take about 8 hours of marinating and approx. 6 hrs of drying time in the dehydrator

Ingrediants

2 - 3 pounds salmon (have used steelhead trout as well with great results)
1/2 cup brown sugar
1/4 cup honey
1 dash of liquid smoke
1/4 cup apple cider vinegar
1-1/2 teaspoon of salt( salt slows the growth of bacteria )
2 cloves crushed garlic

Directions

- Place salmon in the freezer for about 45 mins.(much easier to slice if partially frozen).

- Put all other ingredients in a large zip lock bag and shake to combine,tupper ware will also work.

- Remove fish from freezer and cut into 1/4'' thick strips and place in marinade.

- Marinade for 6 to 8 hours,The longer the better in my opinion

- Remove strips from marinade and place on dehydrator racks

- Allow to dry at 130 to 140 degrees until they feel firm and dry but don't crumble apart (about 6 hrs.)

- Once dry, store in a cool dry place, in an airtight container for 2 to 3 weeks.

Great recipe...I will have to give it a try. I'm originally from Detroit Lakes, MN and have always enjoyed Salmon Jerky from Motley.

I got a smokehouse I built in my backyard and got a bunch of salmon in the freezer. I am thinking of trying this Squaw Candy recipe and smoking it most of the day with a real cherry wood fire.

If you're worried about the bacteria adding some #1 pink cure would be best as nitrites kill it better than salt. Salt more dries it out, ie Virginia hams.
